Emmanuel Renaut moved to Megève in 1998 and opened “Flocons de Sel”, a restaurant that has been awarded three Michelin stars. Close to the land and seasonal produce, he distills an inventive cuisine that revisits tradition with visionary modernity.

Chef Emmanuel Renaut is a passionate lover of his Alpine region, which is where he finds his inspiration. From the peaks, where rose hips, blackberries and gentian blossom, to the woods, where porcini mushrooms and chanterelle mushrooms are found, to the plains, where vegetables are cultivated, all the way to Lake Geneva, the kingdom of Féra and Arctic char: the Alps are a colorful market, brought to life by passionate craftsmen.
This encounter between the omnipotence of nature and the know-how of man comes the evidence of a cuisine with authentic tastes.
La Grande Dame 2015, an exceptionally sunny year for a wine full of energy and elegance, enhances the Pinot Noir grape variety, which accounts for 90% of the blend, in keeping with Madame Clicquot's vision: "Our black grapes make the finest white wines".
This vintage cuvée highlights the strength and daring spirit of the woman who was nicknamed ‘the grande dame of Champagne’.
Without ostentation, like the place, 3-star Michelin Chef and Meilleur Ouvrier de France Emmanuel Renaut frees himself from the superfluous to focus on the essential: the delicacy of a pike and monkfish biscuit, the tenderness of a venison fillet. The Chef takes his guests for a walk in Leutaz or a hike in the mountains, where the flavours and aromas reveal the incredible aromatic potential of the Haute-Savoie region.
In 2021, inspiration from Madame Clicquot's audacious vision and quest for perfection gave birth to Garden Gastronomy, the gastronomic signature of our prestige cuvée La Grande Dame. This is a collaboration with Michelin-starred Chefs from around the world, who draw their inspiration from sustainable and responsible cuisine and create pairings around the cuvée.
