Italy's youngest Michelin-starred chef in 2016, Martina Caruso brilliantly runs the Signum restaurant on the tiny island of Salina in northern Sicily. She puts her heart and soul into her favourite ingredients: garlic, oil, chili, fish and octopus - and reveals her deep attachment to her roots, her island and her family's restaurant. At the age of 29, she was named “Italian Chef of the Year 2019” by the Michelin Guide in partnership with Atelier des Grandes Dames Veuve Clicquot. She has also been awarded a green star by the Michelin Guide.

Garden Gastronomy is the gastronomic signature inspired by the excellence of La Grande Dame cuvée: a showcase of the Maison’s excellence composed principally with Pinot Noir from the historic crus of our terroir, striking the perfect balance between strength and finesse.

Through her cuisine, Martina Caruso supports and promotes local producers by reinterpreting the raw materials of the Aeolian Islands and highlighting the flavors, scents and typical products.

La Grande Dame 2015

La Grande Dame 2015, an exceptionally sunny year for a wine full of energy and elegance, enhances the Pinot Noir grape variety, which accounts for 90% of the blend, in keeping with Madame Clicquot's vision: "Our black grapes make the finest white wines".  

This vintage cuvée highlights the strength and daring spirit of the woman who was nicknamed ‘the grande dame of Champagne’.

Signum restaurant boasts three breathtaking terraces, where every detail is carefully curated to create an unforgettable dining experience. The dishes, true masterpieces of flavor and presentation, showcase the finest fresh ingredients. The menu changes with the seasons, celebrating the island’s rich agricultural bounty.

In 2021, inspiration from Madame Clicquot's audacious vision and quest for perfection gave birth to Garden Gastronomy, the gastronomic signature of our prestige cuvée La Grande Dame. This is a collaboration with Michelin-starred Chefs from around the world, who draw their inspiration from sustainable and responsible cuisine and create pairings around the cuvée.

A committed, plant-based and colourful cuisine, where vegetables, herbs and fruit take center stage, while meat, fish and eggs are cooked as condiments.
