At his Villa Aida restaurant in Wakayama prefecture, Chef Kanji Kobayashi draws inspiration from the majestic landscapes that surround him - hills, sea, mountains and a sparkling river - to create a bold cuisine rooted in its exceptional surroundings. Villa Aida, which welcomes just one group a day, was awarded its second Michelin star and a green star in 2021, and has been ranked among Asia's 50 best restaurants since 2022, reaching 14th in 2023.
Garden Gastronomy is the gastronomic signature inspired by the excellence of La Grande Dame cuvée: a showcase of the Maison’s excellence composed principally with Pinot Noir from the historic crus of our terroir, striking the perfect balance between strength and finesse.

Chef Kobayashi and his wife grow around 300 varieties of vegetables and herbs each year in their kitchen garden, located close to the restaurant. These products, harvested the same day, are blended with local seafood, poultry and game, perfectly illustrating the “farm to table” philosophy.
Villa Aida, which has been celebrating this approach for over 25 years, confirms its place among the references of haute gastronomy.
La Grande Dame 2015, an exceptionally sunny year for a wine full of energy and elegance, enhances the Pinot Noir grape variety, which accounts for 90% of the blend, in keeping with Madame Clicquot's vision: "Our black grapes make the finest white wines".
This vintage cuvée highlights the strength and daring spirit of the woman who was nicknamed ‘the grande dame of Champagne’.
