En la actualidad es un chef destacado con 17 puntos Gault Millau y una estrella Michelin, además de propietario del IN LAIN Hotel Cadonau en Brail, el hotel de 5 estrellas superior de menor tamaño en Suiza. Para su cocina, Dario se inspira en la naturaleza que le rodea, trabajando sobre todo con productos locales de temporada procedentes de Engadina, combinados con una creatividad sin límites.

The Garden Gastronomy experience

Chef Dario Cadonau, passionate about local cuisine and environmentally committed, sources his ingredients from local producers in the Engadin region to offer his guests a true Alpine experience, from the very first amuse-bouche to dessert.

He also produces his own traditional alpine cheese, made from raw milk from valley cows, a practice that perfectly embodies the spirit of Garden Gastronomy in harmony with La Grande Dame.

Garden Gastronomy

Inspired by Madame Clicquot’s audacious spirit, Garden Gastronomy, born in 2021, is an initiative that brings together a community of Michelin-starred chefs from around the world, creating bespoke food and champagne pairings specially imagined for La Grande Dame.

This approach invites a rediscovery of taste through a truly authentic culinary experience. The chefs’ creativity is expressed through the celebration of garden-grown ingredients—freshly harvested fruits and vegetables—echoing those cultivated in the Maison’s emblematic kitchen garden at the Manoir de Verzy.
