Simple & Refined Sauce
Preparation
1. Caramelized Red Onions
Thinly slice the red onion. Sauté gently in a little butter or oil over medium heat for 10–15 minutes until soft and lightly golden. Season with a pinch of salt and set aside.
2. The Sauce
Mix the mayonnaise and Dijon mustard until smooth. Add a few drops of lemon juice for freshness if desired. Adjust seasoning with salt and pepper.
3. The Patties
Season the beef patties generously with salt and pepper. Cook in a pan or on the grill to your preferred doneness. One to two minutes before the end of cooking, place a slice of cheddar on each patty, cover, and allow to melt perfectly.
4. Assembly
Lightly toast the brioche buns. Spread a spoonful of sauce on the base, then place the patty with melted cheddar. Add the caramelized red onions, a few pickles, and some lettuce or arugula leaves. Close with the top bun and serve immediately.
