Dario Cadonau, who runs the In Lain Cadonau hotel in Brail - the smallest 5-star luxury hotel in Switzerland - is a renowned chef awarded a Michelin star. Inspired by the natural surroundings, his cuisine focuses on seasonal, local produce from the Engadine region, expressing boundless creativity.
Garden Gastronomy is the gastronomic signature inspired by the excellence of La Grande Dame cuvée: a showcase of the Maison’s excellence composed principally with Pinot Noir from the historic crus of our terroir, striking the perfect balance between strength and finesse.

As an expert in the Art de la Table, Dario Cadonau, driven by his taste for local cuisine and his ecological sensitivity, has naturally joined forces with the Maison Veuve Clicquot as Chef Garden Gastronomy x La Grande Dame. He works with local producers in the Engadine, offering his guests a true alpine experience, from the first amuse-bouche to dessert.
He also produces his traditional mountain cheese, made from the raw milk of the valley's cows. This is how he works for the Garden Gastronomy experience, in harmony with the La Grande Dame cuvée.
La Grande Dame 2015, an exceptionally sunny year for a wine full of energy and elegance, enhances the Pinot Noir grape variety, which accounts for 90% of the blend, in keeping with Madame Clicquot's vision: "Our black grapes make the finest white wines".
This vintage cuvée highlights the strength and daring spirit of the woman who was nicknamed ‘the grande dame of Champagne’.
In a warm, wood-panelled atmosphere, the gastronomic restaurant Vivanda offers a modern tasting menu featuring cuisine concocted from local produce. Chef Dario Cadonau's commitment to the region is reflected in his love of excellent ingredients. The restaurant has been awarded a Gault & Millau rating of 17.
In 2021, inspiration from Madame Clicquot's audacious vision and quest for perfection gave birth to Garden Gastronomy, the gastronomic signature of our prestige cuvée La Grande Dame. This is a collaboration with Michelin-starred Chefs from around the world, who draw their inspiration from sustainable and responsible cuisine and create pairings around the cuvée.
