On this unique evening, October 28, Chef Lucas Brocheton will present a six-course menu designed as a sensory journey through the aromatic palette of La Grande Dame 2018. The experience will be elevated by the presence of Didier Mariotti, Chef de Cave of the House of Veuve Clicquot, who will share his expertise and vision.

Designed by Chef Lucas Brocheton, this menu pays tribute to the incredible nuances of La Grande Dame 2018. Each dish draws inspiration from a color, an emotion, and a delicate balance between land and sea, salinity and sunlight.

This exceptional tasting experience, imagined as a conversation between Coteau’s cuisine and our prestigious La Grande Dame 2018 cuvée, embodies the bold and refined spirit of our Maison.

Six-course menu:

Deep Black – Poached oyster, squid ink, guanciale, caviar.

White & Mineral Grey – Fermented Jerusalem artichoke, black lemon, hazelnut

Pale Yellow – Scallop, daikon, kombu, orange

Amber Yellow – Cod, Soisson bean, carrot

Soft Orange – Spaghetti squash and butternut, sumac

Red & Saffron – Veal, sabayon
