Oriental Tekone-Sushi with Grilled Summer Vegetables and Bonito

Discover a fine oriental twist on the traditional Japanese Sushi style “Tekone-Sushi”. A colorful and playful sushi made possible with the two talented chef; Manto Ueno, a sushi chef who is active around the world and Kan Morieda, acclaimed Thai chef famous for his gastronomic Thai cuisine. Enjoy this unique creation by the two New Makers Collective chef.

KAN MORIEDA

After graduating from culinary school, he moved to Australia. He learned the basics of cooking at “Tetsuya’s”, regularly ranked as one of the world’s best restaurant. Upon returning to Japan, he trained at Kyoto cuisine “Kogetsu” and “Tapas Molecular Bar” in Mandarin Oriental Hotel, which is famous for its molecular gastronomy. After working at “Salmon & Trout” in Shimokitazawa, he is currently a chef at a Thai restaurant “Chompoo” in Shibuya. In addition to being active as a member of “Chefs for the Blue”, he also is a key member of Eat Creator.

MANATO UENO

Born in Tokyo in 1987.

After graduating from high school, he learned traditional techniques and how to handle ingredients at a renown sushi restaurant in Ginza. Through his training, he expanded his own career. He then came to opportunities to support restaurants in various countries outside of Japan.

After teaching the basics of Japanese cuisine in Vietnam and Italy, he was entrusted with the management of a sushi restaurant in MGM MACAU CASINO RESORTS. Now, he has returned to Japan working as a chef for private parties as well as serves as a private chef to individuals.

Since 2020, he has been working as the head chef at MGM CASINO RESORTS.
